RECIPE – Yummy Avocado Burgers

Autoimmune Recipes: Avocado Burger with Sweet Potato Bun

INGREDIENTS
For the Buns

2–3 large, round sweet potatoes

1 Tablespoon coconut oil

1/4 Teaspoon sea salt

For the Burgers

1 lb. ground beef

1 Teaspoon sea salt

One Teaspoon garlic powder

1 Teaspoon onion powder

Toppings

1 Medium avocado, sliced

Sliced red onion

Arugula

INSTRUCTIONS
For the Buns

  1. Clean, dry, and slice the sweet potato into 1/4-inch-thick slices.
  2. Place on a parchment paper lined cookie sheet. 
  3. Coat them in coconut oil and top with sea salt. Bake for 40 mins at 375°. Once they are tender, remove, and allow to cool.

For the Burgers

  1. Fire up the grill! Season burgers with salt, garlic powder and onion powder. 
  2. Over medium-high heat, grill burger patties for 5 minutes each side. 
  3. Once the internal temperature reaches 135° (for Medium temp) remove, place each patty on a “bun.” 
  4. Garnish with a few slices of avocado and red onion and a few sprigs of arugula.

Oh, the many, many sweet health benefits of sweet potatoes! Sweet potatoes are a superfood thanks to their plethora of health benefits. They’re a rich source of fiber and minerals including calcium, iron, selenium. 

Sweet potatoes are full of beta carotene, a potent antioxidant. They are a potassium-rich food and contain a high density of nutrients including vitamins A, B6 and C.

Did you know that avocados are the only fruit (or veggie) that contains over 20 minerals, vitamins, and antioxidants? The health benefits of avocados cannot be stated enough. Look at all that avocados provide:

  1. Rich in monounsaturated fatty acids. These lower LDL and raise HDL cholesterol levels.
  2. Full of healthy fats, avocados increase the absorption of the nutrients they provide. They also increase absorption of the nutrients from other healthy foods you eat.
  3. High amounts of soluble and insoluble fiber help prevent constipation.
  4. Contains 21% of the recommended daily intake of potassium (727mg). This helps lower blood pressure.
  5. The antioxidants and monounsaturated fats in avocados provide anti-inflammatory properties helpful with arthritis.
  6. The fiber and good fats in avocados make them an effective blood sugar stabilizer for diabetics.
  7. Studies find that the phytochemicals in avocados play a role in cancer prevention.
